A Japanese snack bar is the hardest kind of place for a visitor to walk into alone. There is a sliding door, a regulars-only feel, and an unwritten rule that you were probably invited. Most travelers never get past the threshold.

Behind those doors sit some of the warmest rooms in the city: a Mama pouring shochu, a plate of handmade gyoza, conversation that does not need much language to work.
A local guide takes you into two snack bars, one run by a 75-year-old owner, the other lined with hundreds of manga titles and a karaoke machine. In between, you walk Ningyo Shoji, a bar alley barely a hundred meters long.
It ends with a bowl of katsudon at a spot that stays busy past midnight, finished in a sweet-and-spicy sauce the regulars come back for.
